Inspiration:

Our vegan version of the traditional non spicy Taiwanese Golden kimchi.

This delicious fermented "salad style" kimchi is meant to eat while it is young. It is produced from fermented Napa cabbage with carrots. Married with a fragrant, slightly sweet sauce made with fermented tofu, ginger, sesame oil and mirin blended in rice vinegar with chunks of carrot. A delicious sweet & sour kimchi often enjoyed on its own as a salad or side dish.
