Inspiration:

A fusion of the traditional Baek kimchi & a classic shaved fennel and cumin salad

Profile:

Woody warm aroma (cumin) / Spice / Sweet & tangy (honey, sultans, apple cider vinegar)

This delicious fermented "salad style" kimchi is meant to be eaten while it is young. It is produced from fermented Napa cabbage with Asian pears, fennel, white sultans with a sweet dressing made of cumin, garlic and honey blended with a bit of apple cider vinegar. Usually one of our seasonal winter kimchi's, yet it is in high demand and popular, so we make small batches throughout the year. Time and care: 1 month refrigerated. Best within the first week after opening because the dressing is nice and fragrant.
