Pumpkin seed press cake and wheat from the Leitner organic farm in Regau; as well as part of the pumpkin seed press cake from the Metz pumpkin farm in Haag / Lower Austria. The production process is quite similar to that of soy sauce, except using pumpkin seed press cake instead of soybeans. Normally, the press cake is either used as animal feed or spread back on the fields after oil pressing. However, the press cake has a very high protein content, which is why it's perfectly suited for this type of fermentation. The result is a nutty soy sauce without soy.
