Inspiration: Our vegan version of the traditional non-spicy Taiwanese Golden kimchi.
This delicious fermented "salad style" kimchi is meant to eat while it is young. It is produced from fermented Napa cabbage with carrots. Married with a fragrant, slightly sweet sauce made with fermented tofu, ginger, sesame oil, and mirin blended in rice vinegar with chunks of carrot. A delicious sweet & sour kimchi is often enjoyed on its own as a salad or side dish.s, carrots, daikon, and spring onion.
