A SCOBY (Synthetic Culture of Bacteria and Yeast) is a rubbery, pancake-like culture that transforms sweet tea into kombucha through natural fermentation. It feeds on sugar, producing organic acids, carbonation, and a light tang.
What it does:
- Yeasts break down sugars into ethanol and carbon dioxide
- Bacteria convert ethanol into acetic, gluconic, and other organic acids
- Produces mild carbonation, tangy acidity, and beneficial compounds
- Acts as a protective layer, sealing the ferment from contaminants
